🍰 Winter Bundt Cake

Ingredients
- 200 g ground walnuts
- 1 tsp gingerbread spice
- 0.5 Orange zest (unwaxed)
- 200 g butter
- 200 g sugar
- 1 packet vanilla sugar
- 2 salt
- 4 eggs
- 300 g flour
- 2 tsp baking powder
- 50 g whipping cream
- 100 g white couverture
- 100 g dark couverture
- 2 tbsp sliced almonds
- butter (for greasing)
- breadcrumbs (for dusting)
Instructions
- 1. Roast the nuts in a dry pan while stirring constantly until they are fragrant.
- 2. Remove the nuts from the pan and let them cool completely.
- 3. Mix the cooled nuts with gingerbread spice and orange peel.
- 4. Grease a large Bundt cake pan (approx. 24 cm diameter) and dust it with breadcrumbs.
- 5. Beat butter, sugar, vanilla sugar, and salt until creamy.
- 6. Add the eggs one by one to the butter-sugar mixture.
- 7. Stir in flour, baking powder, the spiced nuts, and cream.
- 8. Pour the batter into the prepared pan.
- 9. Preheat the oven to 180°C.
- 10. Bake the cake in the preheated oven for about 50 minutes.
- 11. Cover the cake with aluminum foil if necessary to prevent it from becoming too dark.
- 12. Remove the Bundt cake from the oven and let it cool.
- 13. Turn the cake out of the pan.
- 14. Melt the chocolate coatings separately in a water bath.
- 15. Drizzle the cake alternately with the melted chocolate coatings.
- 16. Finally, sprinkle the cake with almonds.
