🍰 Cozy Winter Fruit Cake

Ingredients
- 3 Eggs
- 75 g Raw Cane Sugar
- 1 Pinch Salt
- 1 Pinch Clove
- 1 Pinch Nutmeg Flower
- 1 Pinch Cardamom
- 1 Pinch Grated Ginger
- 1 Orange Peel
- 120 g Spelt Whole Wheat Flour
- 1 Packet Baking Powder
- 50 g Chopped Almond Kernels
- 100 g Chopped Walnuts
- 150 g Dried Fig
- 150 g Dried Dates
- 50 g Apple Rings (Dried)
- 75 g Currants
- 75 g Raisins
- Flour (for Dusting)
- 5 Egg Whites
- 150 g Powdered Sugar (from Raw Cane Sugar)
Instructions
- 1. Add eggs, raw cane sugar, spices, orange zest, spelt flour, and baking powder to a bowl.
- 2. Mix the ingredients until a uniform dough forms.
- 3. Fold in the almonds and the roughly chopped walnuts.
- 4. Cut the figs, dates, and apple rings into small pieces.
- 5. Add the fruit pieces along with the currants and raisins to the bowl.
- 6. Lightly dust everything with flour and mix well.
- 7. Grease a baking pan if necessary.
- 8. Pour the dough into the pan.
- 9. Preheat the oven to 180 °C (convection 160 °C or gas mark 2).
- 10. Bake the cake for 100 minutes.
- 11. Cover the surface with parchment paper after 50 minutes.
- 12. Remove the pan after baking.
- 13. Release the cake from the pan and let it cool.
- 14. Whip the egg whites in a clean bowl until stiff.
- 15. Gradually sprinkle the powdered sugar into the eggs.
- 16. Continue whipping until the meringue is shiny and firm.
- 17. Spread the meringue mixture evenly over the cooled cake.
- 18. Preheat the oven to 90 °C (convection 70 °C or gas mark 1).
- 19. Place a wooden spoon in the oven door to keep a small gap open.
- 20. Dry the cake in the oven for about 1 hour.
- 21. Remove the cake and decorate it as desired.
