  1. 1. Add eggs, raw cane sugar, spices, orange zest, spelt flour, and baking powder to a bowl.
  2. 2. Mix the ingredients until a uniform dough forms.
  3. 3. Fold in the almonds and the roughly chopped walnuts.
  4. 4. Cut the figs, dates, and apple rings into small pieces.
  5. 5. Add the fruit pieces along with the currants and raisins to the bowl.
  6. 6. Lightly dust everything with flour and mix well.
  7. 7. Grease a baking pan if necessary.
  8. 8. Pour the dough into the pan.
  9. 9. Preheat the oven to 180 °C (convection 160 °C or gas mark 2).
  10. 10. Bake the cake for 100 minutes.
  11. 11. Cover the surface with parchment paper after 50 minutes.
  12. 12. Remove the pan after baking.
  13. 13. Release the cake from the pan and let it cool.
  14. 14. Whip the egg whites in a clean bowl until stiff.
  15. 15. Gradually sprinkle the powdered sugar into the eggs.
  16. 16. Continue whipping until the meringue is shiny and firm.
  17. 17. Spread the meringue mixture evenly over the cooled cake.
  18. 18. Preheat the oven to 90 °C (convection 70 °C or gas mark 1).
  19. 19. Place a wooden spoon in the oven door to keep a small gap open.
  20. 20. Dry the cake in the oven for about 1 hour.
