🍽️ Cream Puffs Stuffed with Cream Cheese

Ingredients
- 300 g flour
- 500 ml water
- 200 g butter
- 8 eggs
- 1 level tsp salt
- 500 g cream cheese
- 150 g whipping cream
- 200 g crème fraîche
- salt
- pepper (from the mill)
- 4 tbsp fresh herbs to taste (e.g. cress, chives, thyme, parsley)
Instructions
- 1. Put water, butter, and salt in a pot and bring the mixture to a boil.
- 2. Remove the pot from the heat and stir in the flour with a wooden spoon.
- 3. Place the pot back on the stove and keep stirring until a firm dough ball forms.
- 4. Transfer the dough to a bowl and let it cool down briefly.
- 5. Stir the eggs into the dough one by one until fully incorporated.
- 6. Grease a baking tray well or line it with baking paper.
- 7. Preheat the oven to 200 degrees Celsius with fan setting.
- 8. Fill the dough into a piping bag.
- 9. Pipe small mounds of dough onto the prepared baking tray.
- 10. Bake the puffs for about 15 to 20 minutes until golden brown.
- 11. Do not open the oven during baking to prevent the puffs from collapsing.
- 12. Slice the warm puffs in half horizontally and let them cool down completely.
- 13. Whisk cream cheese and crème fraîche together in a separate bowl.
- 14. Fold the whipped cream into the cheese mixture.
- 15. Stir the finely chopped herbs into the cream.
- 16. Season the filling with salt and pepper to taste.
- 17. If the cream seems too runny, stir in a little more cream cheese.
- 18. Fill the cream cheese mixture into the bottom halves of the cooled puffs.
- 19. Place the top halves of the puffs back on as lids.
