  1. 1. Put water, butter, and salt in a pot and bring the mixture to a boil.
  2. 2. Remove the pot from the heat and stir in the flour with a wooden spoon.
  3. 3. Place the pot back on the stove and keep stirring until a firm dough ball forms.
  4. 4. Transfer the dough to a bowl and let it cool down briefly.
  5. 5. Stir the eggs into the dough one by one until fully incorporated.
  6. 6. Grease a baking tray well or line it with baking paper.
  7. 7. Preheat the oven to 200 degrees Celsius with fan setting.
  8. 8. Fill the dough into a piping bag.
  9. 9. Pipe small mounds of dough onto the prepared baking tray.
  10. 10. Bake the puffs for about 15 to 20 minutes until golden brown.
  11. 11. Do not open the oven during baking to prevent the puffs from collapsing.
  12. 12. Slice the warm puffs in half horizontally and let them cool down completely.
  13. 13. Whisk cream cheese and crème fraîche together in a separate bowl.
  14. 14. Fold the whipped cream into the cheese mixture.
  15. 15. Stir the finely chopped herbs into the cream.
  16. 16. Season the filling with salt and pepper to taste.
  17. 17. If the cream seems too runny, stir in a little more cream cheese.
  18. 18. Fill the cream cheese mixture into the bottom halves of the cooled puffs.
  19. 19. Place the top halves of the puffs back on as lids.
