🍽️ Wild Pepper in Red Wine with Mushrooms

Ingredients
- 2 onions
- 2 carrots
- 2 garlic cloves
- 1 sprig rosemary
- 1 bunch thyme
- 2 bay leaves
- 10 peppercorns
- 750 g wild goulash
- red wine
- 125 g shallots
- 100 g streaky bacon
- 2 tbsp oil
- 1 splash cognac
- 1 tbsp flour
- 250 g mushrooms
- 1 tbsp butter
Instructions
- 1. Chop onions, carrots, and garlic finely. Mix these together with herbs, peppercorns, wild goulash, and red wine, and let it marinate for 12 hours.
- 2. Peel shallots. Cut bacon into small pieces. Heat oil and lightly fry the shallots and bacon in it. Then set aside.
- 3. Remove the wild goulash from the marinade, pat dry, and brown in the frying fat. Deglaze with cognac and sprinkle flour over it. Gradually add the marinade. Cover and simmer for 1 hour.
- 4. Quarter the mushrooms and fry them in butter. Then add them to the sauce together with the bacon mixture. Season with salt and pepper.
