  1. 1. Wash the zucchini thoroughly and cut off the hard ends.
  2. 2. Slice the zucchini lengthwise into very thin strips or use a peeler.
  3. 3. Bring a pot of salted water to a boil.
  4. 4. Add the zucchini strips to the boiling water for 3 minutes.
  5. 5. Drain the zucchini and rinse it immediately with cold water to stop the cooking process.
  6. 6. Let the zucchini drain well.
  7. 7. Wash the garlic chives and shake them dry.
  8. 8. Chop the garlic chives coarsely.
  9. 9. Halve the lemon and squeeze out the juice.
  10. 10. Mix the sour cream with one tablespoon of lemon juice, honey, salt, and pepper.
  11. 11. Fold in the chopped garlic chives into the zucchini and let the mixture rest for a moment.
  12. 12. Rinse the wild salmon under cold water.
  13. 13. Pat the salmon dry with a kitchen towel.
  14. 14. Cut the salmon into 8 equal slices.
  15. 15. Heat oil in a frying pan.
  16. 16. Fry the salmon pieces for 2 to 3 minutes on each side.

  18. 18. Remove the salmon from the pan and let it rest until it is fully cooked.

  20. 20. Place the salmon slices on top of the zucchini.

  22. 22. Rinse the cress in a sieve.
  23. 23. Garnish the salmon with the fresh cress.
