🍽️ Colorful Zucchini Noodles with Smoked Salmon and Garlic Chive Cream

Ingredients
- 250 g zucchini (1 zucchini)
- salt
- 50 g wild garlic (1 bunch)
- 1 lemon
- 100 g sour cream
- 1 tsp honey
- pepper
- 600 g wild salmon fillet (alternatively salmon fillet)
- 2 tbsp olive oil
- 0.5 box cress
Instructions
- 1. Wash the zucchini thoroughly and cut off the hard ends.
- 2. Slice the zucchini lengthwise into very thin strips or use a peeler.
- 3. Bring a pot of salted water to a boil.
- 4. Add the zucchini strips to the boiling water for 3 minutes.
- 5. Drain the zucchini and rinse it immediately with cold water to stop the cooking process.
- 6. Let the zucchini drain well.
- 7. Wash the garlic chives and shake them dry.
- 8. Chop the garlic chives coarsely.
- 9. Halve the lemon and squeeze out the juice.
- 10. Mix the sour cream with one tablespoon of lemon juice, honey, salt, and pepper.
- 11. Fold in the chopped garlic chives into the zucchini and let the mixture rest for a moment.
- 12. Rinse the wild salmon under cold water.
- 13. Pat the salmon dry with a kitchen towel.
- 14. Cut the salmon into 8 equal slices.
- 15. Heat oil in a frying pan.
- 16. Fry the salmon pieces for 2 to 3 minutes on each side.
- 17. Season the salmon with salt and pepper.
- 18. Remove the salmon from the pan and let it rest until it is fully cooked.
- 19. Portion the zucchini and garlic chive mixture onto four plates.
- 20. Place the salmon slices on top of the zucchini.
- 21. Cut the cress from the bed.
- 22. Rinse the cress in a sieve.
- 23. Garnish the salmon with the fresh cress.
