Ingredients
- 4 veal cutlets (á 100. -150 g)
- salt
- pepper (from the mill)
- flour (for dredging)
- 1 egg
- 100 g breadcrumbs
- ghee (for frying)
- 1 lemon
Instructions
- 1. Take the flat side of a meat mallet.
- 2. Pound the cutlets until they are evenly thin.
- 3. Season the cutlets with salt and pepper.
- 4. Place the flour on a plate.
- 5. Place the breadcrumbs on a second plate.
- 6. Beat the eggs loosely in a deep bowl.
- 7. Heat ghee in a large frying pan.
- 8. Make sure there is enough oil so the cutlets almost float.
- 9. Coat the cutlets in the flour first.
- 10. Dip the cutlets into the egg mixture next.
- 11. Press the cutlets into the breadcrumbs last.
- 12. Ensure the meat is covered all around.
- 13. Fry the cutlets on the first side for 3 to 4 minutes until golden yellow.
- 14. Fry the cutlets on the second side for another 3 to 4 minutes until golden yellow.
- 15. Drain excess fat on kitchen paper.
- 16. Cut the lemon into wedges.
- 17. Serve the schnitzel immediately with the lemon wedges.
