  1. 1. Take the flat side of a meat mallet.
  2. 2. Pound the cutlets until they are evenly thin.
  3. 3. Season the cutlets with salt and pepper.
  4. 4. Place the flour on a plate.
  5. 5. Place the breadcrumbs on a second plate.
  6. 6. Beat the eggs loosely in a deep bowl.
  7. 7. Heat ghee in a large frying pan.
  8. 8. Make sure there is enough oil so the cutlets almost float.
  9. 9. Coat the cutlets in the flour first.
  10. 10. Dip the cutlets into the egg mixture next.
  11. 11. Press the cutlets into the breadcrumbs last.
  12. 12. Ensure the meat is covered all around.
  13. 13. Fry the cutlets on the first side for 3 to 4 minutes until golden yellow.
  14. 14. Fry the cutlets on the second side for another 3 to 4 minutes until golden yellow.
  15. 15. Drain excess fat on kitchen paper.
  16. 16. Cut the lemon into wedges.
  17. 17. Serve the schnitzel immediately with the lemon wedges.
