🍽️ Preparing Wiener Schnitzel

Ingredients
- 2 veal cutlets
- 1 lemon (organic)
- 1 tsp peppercorns (to taste)
- 150 g clarified butter (as needed)
- 1 egg
- 8 tbsp breadcrumbs
- 3 tbsp flour
Instructions
- 1. 1) Flatten the cutlets using a meat mallet or the blade of a knife.
- 2. Season to taste with some lemon zest and crushed pepper.
- 3. 2) Place the flour, breadcrumbs, and eggs on separate plates, and have the clarified butter ready. Whisk the eggs well.
- 4. Dip the cutlets first into the flour, then into the eggs.
- 5. 3) Dredge in the breadcrumbs, pressing them on well. If the coating doesn't stick enough, dip them back into the eggs and coat in the breadcrumbs again.
- 6. 4) Heat plenty of clarified butter in a deep pot and fry the cutlets on both sides in the hot fat until golden brown.
- 7. Drain on kitchen paper and serve hot with lemon wedges.
