  1. 1. 1) Flatten the cutlets using a meat mallet or the blade of a knife.
  2. 2. Season to taste with some lemon zest and crushed pepper.
  3. 3. 2) Place the flour, breadcrumbs, and eggs on separate plates, and have the clarified butter ready. Whisk the eggs well.
  4. 4. Dip the cutlets first into the flour, then into the eggs.
  5. 5. 3) Dredge in the breadcrumbs, pressing them on well. If the coating doesn't stick enough, dip them back into the eggs and coat in the breadcrumbs again.
  6. 6. 4) Heat plenty of clarified butter in a deep pot and fry the cutlets on both sides in the hot fat until golden brown.
  7. 7. Drain on kitchen paper and serve hot with lemon wedges.
