🍽️ Crispy Wiener Schnitzel with Lemon Zest

Ingredients
- 1 untreated lemon
- 4 tbsp breadcrumbs
- salt
- pepper (from the mill)
- 1 pinch paprika powder (mild sweet)
- 4 veal schnitzel (approx. 160 g each)
- 2 tbsp flour
- 1 egg
- 60 g ghee
Instructions
- 1. Rinse the lemon under running water and pat it dry.
- 2. Finely grate the lemon zest and squeeze out the juice.
- 3. Mix the lemon zest with the breadcrumbs.
- 4. Add some salt, pepper, and paprika powder to the breadcrumb-lemon mixture.
- 5. Rinse the schnitzels and dry them with a kitchen towel.
- 6. Pound the schnitzels flat if necessary.
- 7. Drizzle the schnitzels with the lemon juice.
- 8. Dust the schnitzels with flour on both sides.
- 9. Whisk the egg in a shallow bowl.
- 10. Coat the schnitzels in the egg mixture.
- 11. Then coat the schnitzels in the lemon breadcrumb mixture.
- 12. Press the coating firmly onto the meat.
- 13. Heat the ghee (clarified butter) in a large frying pan.
- 14. Fry the schnitzels for about 5 minutes on each side until golden brown.
- 15. Regularly spoon the hot ghee over the schnitzels.
- 16. Serve the schnitzels, for example, with mashed potatoes, chives, and fried onions.
