Ingredients
- 100 g soft butter
- 50 g sugar
- 100 g cream cheese
- 100 g powdered sugar
- 60 g apricot jam
- 50 g chopped pistachios
- 30 g dried cranberries
- 275 g soft butter
- 100 g brown sugar
- 2 eggs
- 200 g flour
- 100 g ground hazelnuts
- 1 tsp baking powder
- 1 pinch salt
- 1 pinch cinnamon powder
- 30 g dried apricots
- 30 g dried cranberries
Instructions
- 1. Beat the butter together with the brown sugar until creamy.
- 2. Add the eggs and beat the mixture until light and fluffy.
- 3. Mix the flour, chopped hazelnuts, baking powder, salt, and cinnamon in a separate bowl.
- 4. Add the dry mixture to the butter-egg mixture.
- 5. Stir everything together to form a smooth and thick dough.
- 6. Chop the apricots and cranberries finely.
- 7. Gently fold the dried fruits into the dough.
- 8. Preheat the oven to 180 degrees Celsius fan-forced.
- 9. Scoop small portions of the dough using a spoon.
- 10. Place the dough portions on a baking sheet lined with baking paper.
- 11. Bake the pies for 10 to 15 minutes until golden brown.
- 12. Carefully remove the pies from the baking sheet.
- 13. Let them cool completely on a wire rack.
- 14. Beat the butter for the filling until creamy.
- 15. Stir the sugar into the butter.
- 16. Mix the cream cheese into the butter-sugar mixture.
- 17. Add the powdered sugar gradually.
- 18. Beat the cream until it is spreadable.
- 19. Spread the cream on the bottom side of half of the cooled pies.
- 20. Place the remaining pies on top as lids.
- 21. Decorate the finished pies with some jam.
- 22. Sprinkle chopped pistachios and cranberries over them.
