  2. 2. Add the wheat groats to the boiling water and cook them according to the package instructions.
  3. 3. Drain the wheat groats and let them cool down.
  4. 4. Cut the apricots into small pieces.
  5. 5. Place the apricot pieces in the apple juice and let them soak for 30 minutes.
  6. 6. Roughly chop the pistachios.
  7. 7. Wash the celery thoroughly.
  8. 8. Remove the tough fibers and leaves from the celery.
  9. 9. Cut the celery into small pieces.
  10. 10. Wash the mint.
  11. 11. Shake the mint dry.
  12. 12. Chop the mint leaves.
  13. 13. Drain the apple juice from the apricots.
  14. 14. Place the apricots, mint, pistachios, cooled wheat groats, and celery in a bowl.
  15. 15. Add the olive oil, lemon juice, and agave syrup.
  16. 16. Mix all ingredients well together.
  17. 17. Let the salad marinate for 10 minutes.
  18. 18. Cut apples into wedges.
  19. 19. Garnish the salad with the apple wedges.
