🍽️ Wheat Groats Salad with Apricots

Ingredients
- 250 g soft wheat grains (e.g. Ebly)
- salt
- 60 g dried apricots
- 150 ml apple juice
- 50 g pistachio kernels
- 4 stalks celery
- 3 sprigs mint
- 40 ml mild olive oil
- 0.5 lemon (juice)
- 1 tsp agave syrup
- apple wedges (for garnish)
Instructions
- 1. Boil water in a pot and add some salt.
- 2. Add the wheat groats to the boiling water and cook them according to the package instructions.
- 3. Drain the wheat groats and let them cool down.
- 4. Cut the apricots into small pieces.
- 5. Place the apricot pieces in the apple juice and let them soak for 30 minutes.
- 6. Roughly chop the pistachios.
- 7. Wash the celery thoroughly.
- 8. Remove the tough fibers and leaves from the celery.
- 9. Cut the celery into small pieces.
- 10. Wash the mint.
- 11. Shake the mint dry.
- 12. Chop the mint leaves.
- 13. Drain the apple juice from the apricots.
- 14. Place the apricots, mint, pistachios, cooled wheat groats, and celery in a bowl.
- 15. Add the olive oil, lemon juice, and agave syrup.
- 16. Mix all ingredients well together.
- 17. Let the salad marinate for 10 minutes.
- 18. Cut apples into wedges.
- 19. Garnish the salad with the apple wedges.
