  1. 1. Mix 50 grams of wheat flour with 50 milliliters of lukewarm water to make the pre-dough.
  2. 2. Cover the bowl with cling film.
  3. 3. Let the pre-dough rise for 24 hours at room temperature.
  4. 4. Sift the remaining wheat flour into a large bowl.
  5. 5. Sprinkle the salt over the flour.
  6. 6. Dissolve the yeast and sugar in 350 milliliters of lukewarm water.
  7. 7. Pour the yeast solution and the pre-dough into the flour bowl.
  8. 8. Knead the ingredients into a smooth dough using the dough hooks of an electric mixer.
  9. 9. Cover the bowl and let the dough rise for 45 minutes in a warm place.
  10. 10. Sprinkle some flour on the work surface.
  11. 11. Knead the dough briefly.
  12. 12. Divide the dough into two equal portions.
  13. 13. Shape each portion into a round ball.
  14. 14. Place the dough balls on a baking tray lined with baking paper.
  15. 15. Cover the breads and let them rise again for 45 minutes in a warm place.
  16. 16. Preheat the oven to 220 degrees.
  17. 17. Score the tops of the breads diagonally in a cross pattern, about half a centimeter deep, using a sharp knife.
  18. 18. Brush the breads with milk.
  19. 19. Place the baking tray in the center of the preheated oven.
  20. 20. Bake the breads for 10 minutes.
  21. 21. Pour a cup of water onto the oven floor.
  22. 22. Close the oven door immediately.
  23. 23. Bake the breads for another 20 minutes until golden brown.
  24. 24. Remove the breads from the oven.
  25. 25. Place them on a wire cooling rack.
  26. 26. Let the breads cool down completely.
