🍳 Crunchy Wheat Bread

Ingredients
- 500 g Wheat flour Type 550
- 100 g Wheat groats (Type 1700)
- 300 ml lukewarm water
- 1 cube fresh yeast (42 g)
- 3 tbsp Olive oil
- 1 tsp Salt
- Flour (for the work surface)
Instructions
- 1. Put the flour into a large bowl.
- 2. Take one tablespoon of the wheat groats aside and set them aside.
- 3. Mix the remaining wheat groats, two tablespoons of oil, and the salt with the flour.
- 4. Stir the yeast into the lukewarm water until smooth.
- 5. Add the yeast mixture to the flour and mix everything well.
- 6. Knead the dough with the dough hooks of an electric hand mixer until smooth.
- 7. Cover the bowl and let the dough rise in a warm place for about 45 minutes.
- 8. Preheat the oven to 240 degrees.
- 9. Knead the dough thoroughly on a floured work surface.
- 10. Shape the dough into a ball.
- 11. Let the dough ball rise again for about 45 minutes.
- 12. Pull the dough ball apart lengthwise.
- 13. Brush the dough with the remaining oil.
- 14. Sprinkle the dough with the reserved wheat groats.
- 15. Score the dough diagonally a few times.
- 16. Bake the bread in the preheated oven at 240 degrees for 10 minutes.
- 17. Reduce the temperature to 200 degrees.
- 18. Finish baking the bread for another 20 to 25 minutes.
