  1. 1. Place the wheat in a bowl with cold water overnight.
  2. 2. Pour off the soaking water and rinse the wheat.
  3. 3. Put the wheat in fresh water and cook it for about one hour until soft.
  4. 4. Season the cooking water well with salt when there are 15 minutes left until draining.
  5. 5. Drain the wheat and set it aside.
  6. 6. Wash the bell peppers and remove the inside with the seeds.
  7. 7. Cut the peppers into small cubes.
  8. 8. Heat two tablespoons of olive oil in a pan.
  9. 9. Sauté the pepper cubes together with the fennel lightly.
  10. 10. Mix the sautéed fennel and peppers with the cooked wheat.
  11. 11. Finally season the mixture with salt and pepper.
  12. 12. Fry the sausages in a little oil until browned all over.
  13. 13. Cut the cooked sausages into thick slices.
  14. 14. Chop the arugula coarsely.
  15. 15. Gently fold the sausage slices and arugula into the wheat mixture.
  16. 16. Plate the dish and serve it.
