🍽️ Fruity White Cabbage Salad

Ingredients
- 1 small cabbage (approx. 500 g)
- 125 ml vegetable broth (instant)
- 2 tbsp white wine vinegar
- 1 tbsp oil
- salt
- pepper (from the mill)
- 100 g yogurt
- 1 apple
- 200 g white grapes
- 1 tbsp roasted sunflower seeds
Instructions
- 1. Prepare the white cabbage by cutting it lengthwise into four quarters.
- 2. Remove the hard core from each quarter.
- 3. Cut the white cabbage flesh crosswise into very fine strips or use a grater.
- 4. Place the cut strips in a bowl and sprinkle one teaspoon of salt over them.
- 5. Knead the mixture vigorously by hand to draw out the juice.
- 6. Let the salted cabbage rest for one hour.
- 7. Heat the vegetable broth in a pot.
- 8. Add vinegar, oil, and pepper to the warm broth.
- 9. Pour this liquid over the prepared cabbage.
- 10. Mix everything well so that the cabbage absorbs the marinade.
- 11. Let the salad marinate for another thirty minutes.
- 12. Place the cabbage in a colander and let the liquid drain off.
- 13. Place the drained cabbage back into a clean bowl.
- 14. Stir the yogurt into the cabbage.
- 15. Season the mixture vigorously with salt and pepper.
- 16. Wash the apple thoroughly.
- 17. Cut the apple into four parts and remove the core.
- 18. Cut the apple pieces into thin wedges.
- 19. Wash the grapes.
- 20. Dry the grapes with a cloth.
- 21. Add the apple wedges and the grapes to the salad.
- 22. Sprinkle the sunflower seeds over it.
- 23. Mix everything gently until the ingredients are evenly distributed.
