  1. 1. Rinse the white cabbage thoroughly under running water.
  2. 2. Remove the outer, wilted leaves.
  3. 3. Cut the head into four equal quarters.
  4. 4. Cut out the hard core from each quarter.
  5. 5. Slice the cabbage quarters into very fine strips using a vegetable peeler or a sharp knife.
  6. 6. Place the cut strips into a large bowl.
  7. 7. Sprinkle the salt over the cabbage.
  8. 8. Knead the mixture vigorously with your hands.
  9. 9. Continue until a milky juice forms.
  10. 10. Let the cabbage rest for about 30 minutes.
  11. 11. Peel the onions while you wait.
  12. 12. Dice the onions into very fine cubes.
  13. 13. Place the white cabbage into a colander.
  14. 14. Let the juice drain off.
  15. 15. Squeeze the cabbage well to remove remaining liquid.
  16. 16. Return the squeezed cabbage to the bowl.
  17. 17. Add the onion cubes to the cabbage.
  18. 18. Add the vinegar.
  19. 19. Add the coconut blossom sugar.
  20. 20. Add the cumin seeds.
  21. 21. Knead everything well with your hands for a few minutes.
  22. 22. Let the mixture stand for another 15 minutes.
  23. 23. Season the salad with salt and pepper to taste.
  24. 24. Add the oil.
  25. 25. Mix everything well.
  26. 26. Serve the salad.
