🍽️ Relaxed White Cabbage Salad

Ingredients
- 1 kg small white cabbage (1 small white cabbage)
- 2 tsp salt
- 60 g small onions (2 small onions)
- 3 tbsp white wine vinegar
- 1 tsp coconut blossom sugar
- 1 tsp caraway
- pepper from the mill
- 3 tbsp wheat germ oil
Instructions
- 1. Rinse the white cabbage thoroughly under running water.
- 2. Remove the outer, wilted leaves.
- 3. Cut the head into four equal quarters.
- 4. Cut out the hard core from each quarter.
- 5. Slice the cabbage quarters into very fine strips using a vegetable peeler or a sharp knife.
- 6. Place the cut strips into a large bowl.
- 7. Sprinkle the salt over the cabbage.
- 8. Knead the mixture vigorously with your hands.
- 9. Continue until a milky juice forms.
- 10. Let the cabbage rest for about 30 minutes.
- 11. Peel the onions while you wait.
- 12. Dice the onions into very fine cubes.
- 13. Place the white cabbage into a colander.
- 14. Let the juice drain off.
- 15. Squeeze the cabbage well to remove remaining liquid.
- 16. Return the squeezed cabbage to the bowl.
- 17. Add the onion cubes to the cabbage.
- 18. Add the vinegar.
- 19. Add the coconut blossom sugar.
- 20. Add the cumin seeds.
- 21. Knead everything well with your hands for a few minutes.
- 22. Let the mixture stand for another 15 minutes.
- 23. Season the salad with salt and pepper to taste.
- 24. Add the oil.
- 25. Mix everything well.
- 26. Serve the salad.
