🍽️ Crispy Cabbage Fritters with Flaxseed Oil Quark Dip

Ingredients
- 500 g mostly waxy potatoes
- 1 carrot
- 400 g white cabbage
- 1 egg
- 1 tbsp flour
- salt
- nutmeg
- ghee (for frying)
Instructions
- 1. Peel the potatoes and the carrots.
- 2. Grate the vegetables finely.
- 3. Place the grated mixture in a damp kitchen towel.
- 4. Squeeze the moisture out of the towel thoroughly.
- 5. Let the drained vegetable juice sit for a short moment.
- 6. Pour off the clear liquid.
- 7. Keep the starch that has settled at the bottom.
- 8. Wash the white cabbage.
- 9. Remove the hard core from the cabbage.
- 10. Shred the cabbage finely.
- 11. Add the shredded and grated vegetables to a bowl.
- 12. Add the egg and the flour.
- 13. Mix everything well together.
- 14. Season the mixture with salt and nutmeg.
- 15. Heat ghee in a pan (preferably non-stick) until hot.
- 16. Take mounds of the vegetable mixture.
- 17. Place them in the hot pan.
- 18. Press the fritters flat.
- 19. Fry them slowly for 2 to 3 minutes until golden brown.
- 20. Turn the fritters over.
- 21. Fry them for another 2 to 3 minutes until golden brown.
- 22. Fry the fritters in batches.
- 23. Finish about 12 fritters.
- 24. Let the finished fritters drain on kitchen paper.
- 25. Keep them warm in the oven at 80 degrees Celsius if desired.
- 26. Serve quark with flaxseed oil on the side.
