🍽️ White Asparagus Salad with Parsley

Ingredients
- 1 kg white asparagus
- salt
- 20 g parsley (1 bunch)
- 2 tbsp white wine vinegar
- 2 tbsp lemon juice
- 4 tbsp olive oil
- pepper
Instructions
- 1. Peel the asparagus, trim the lower ends, and slice the stalks diagonally into thin slices. Then cook the asparagus slices in boiling salted water for 5 minutes.
- 2. Meanwhile, for the dressing, wash the parsley, drain well, and chop finely. Mix the vinegar, lemon juice, 2–3 tbsp of the asparagus water, oil, salt, pepper, and the chopped parsley well.
- 3. Rinse the asparagus with cold water, drain, and let it drip dry well. Then mix with the dressing and serve slightly warm.
