  1. 1. Peel the asparagus, trim the lower ends, and slice the stalks diagonally into thin slices. Then cook the asparagus slices in boiling salted water for 5 minutes.
  2. 2. Meanwhile, for the dressing, wash the parsley, drain well, and chop finely. Mix the vinegar, lemon juice, 2–3 tbsp of the asparagus water, oil, salt, pepper, and the chopped parsley well.
  3. 3. Rinse the asparagus with cold water, drain, and let it drip dry well. Then mix with the dressing and serve slightly warm.
