  1. 1. Peel the white asparagus thoroughly.
  2. 2. Slice the asparagus diagonally into thin pieces.
  3. 3. Heat one tablespoon of oil in a pan over low heat.
  4. 4. Sauté the asparagus slices for one to two minutes until they lose their color.
  5. 5. Sprinkle some sugar over them and let it caramelize slightly.
  6. 6. Deglaze the pan with a splash of water.
  7. 7. Add lemon juice and season the mixture with salt.
  8. 8. Cover the pan and cook the asparagus for about five minutes until it is still slightly firm.
  9. 9. Wash the strawberries under running water.
  10. 10. Remove the green stems and leaves (hull them).
  11. 11. Cut the strawberries into halves or quarters depending on their size.
  12. 12. Mix the strawberries with vinegar and the remaining oil.
  13. 13. Add the marinated strawberries to the warm asparagus.
  14. 14. Let the salad sit and cool down for about ten minutes.
  15. 15. Finally, adjust the seasoning with salt and pepper to taste.
  16. 16. Sprinkle fresh mint over the salad.
  17. 17. Serve the salad lukewarm or completely chilled.
