🍽️ Delicate Asparagus and Strawberry Salad

Ingredients
- 800 g white asparagus
- 3 tbsp grape seed oil
- 1 tsp whole cane sugar
- 1 tbsp lemon juice
- salt
- 350 g strawberries
- 2 tbsp apple cider vinegar
- 1 tbsp fresh chopped mint
Instructions
- 1. Peel the white asparagus thoroughly.
- 2. Slice the asparagus diagonally into thin pieces.
- 3. Heat one tablespoon of oil in a pan over low heat.
- 4. Sauté the asparagus slices for one to two minutes until they lose their color.
- 5. Sprinkle some sugar over them and let it caramelize slightly.
- 6. Deglaze the pan with a splash of water.
- 7. Add lemon juice and season the mixture with salt.
- 8. Cover the pan and cook the asparagus for about five minutes until it is still slightly firm.
- 9. Wash the strawberries under running water.
- 10. Remove the green stems and leaves (hull them).
- 11. Cut the strawberries into halves or quarters depending on their size.
- 12. Mix the strawberries with vinegar and the remaining oil.
- 13. Add the marinated strawberries to the warm asparagus.
- 14. Let the salad sit and cool down for about ten minutes.
- 15. Finally, adjust the seasoning with salt and pepper to taste.
- 16. Sprinkle fresh mint over the salad.
- 17. Serve the salad lukewarm or completely chilled.
