  1. 1. Soak the morels in lukewarm water for 1 hour.
  2. 2. Strain the soaking water through a fine sieve and set it aside.
  3. 3. Rinse the morels thoroughly under running water.
  4. 4. Carefully dry the morels with a kitchen towel.
  5. 5. Wash the asparagus and peel it.
  6. 6. Cook the asparagus in boiling water with butter and sugar for about 15 minutes.
  7. 7. Drain the asparagus and let it drain well.
  8. 8. Sauté the morels in heated butter for 3 to 4 minutes.
  9. 9. Season the morels with salt and pepper.
  10. 10. Heat the cream in a pot and let it reduce slightly.
  11. 11. Add 3 tablespoons of the mushroom soaking water to the cream.
  12. 12. Season the cream with salt and pepper.
  13. 13. Whip the cream until foamy.
  14. 14. Plate the morels and asparagus.
  15. 15. Top with the morel foam and serve the dish.
