🍽️ Fresh Bean Salad with Herbs

Ingredients
- 2 cans white beans (240 g drained weight each)
- 2 tbsp peppermint geranium (finely chopped)
- 1 tbsp savory (finely chopped)
- 2 tbsp white wine vinegar
- 1 tsp balsamic vinegar
- salt
- pepper (from the mill)
- 1 pinch ground cumin
- 5 tbsp olive oil
Instructions
- 1. Open the can of white beans.
- 2. Pour the beans into a colander.
- 3. Rinse the beans under cold water.
- 4. Let the beans drain well in the colander.
- 5. Place the drained beans into a large bowl.
- 6. Add the fresh herbs to the beans.
- 7. Gently mix the beans and herbs together.
- 8. Pour the vinegar into a small container.
- 9. Add salt and pepper to the vinegar.
- 10. Add ground cumin to the vinegar mixture.
- 11. Stir the spices well into the vinegar.
- 12. Add the olive oil to the vinegar mixture.
- 13. Whisk in the oil until a creamy dressing forms.
- 14. Taste the dressing and adjust the seasoning.
- 15. Pour the finished dressing over the beans.
- 16. Mix everything well so the beans are coated.
- 17. Let the salad sit at room temperature for 30 minutes.
- 18. Harvest the lemon balm from the garden or pot.
- 19. Wash the leaves of the lemon balm.
- 20. Gently dry the leaves.
- 21. Sprinkle the fresh leaves over the salad.
- 22. Serve the salad immediately.
