  1. 1. Melt the chopped chocolate in a water bath.
  2. 2. Whip the egg whites with sugar and vanilla sugar until stiff.
  3. 3. Whip the cream until stiff.
  4. 4. Fold the melted chocolate into the cream, then gently incorporate the egg whites. Fill into a large bowl and let it set in the refrigerator.
  5. 5. To serve, place some raspberry sauce with whipped cream on the plates and lightly swirl with a wooden stick. Scoop the mousse with a spoon (dipped in hot water) and place it on the sauce.
