  1. 1. Place the white beans in a bowl and cover them with cold water. Let them soak for at least 12 hours, preferably overnight.
  2. 2. Drain the soaking water and let the beans drain well.
  3. 3. Pour hot water over the tomatoes, immediately shock them in cold water, and peel off the skin.
  4. 4. Quarter the peeled tomatoes, remove the core, and chop the flesh into small pieces.
  5. 5. Peel the onions and garlic and dice them finely.
  6. 6. Heat oil in a large pan and sauté the onions and garlic until translucent but not brown.
  7. 7. Stir in the tomato paste and deglaze the pan with a splash of vegetable broth.
  8. 8. Add the prepared tomatoes and the drained beans to the pan.
  9. 9. Pour in a little more vegetable broth until the ingredients are almost covered.
  10. 10. Let the mixture simmer on low heat for about 45 minutes, stirring occasionally, until the beans are tender.
  11. 11. If the sauce becomes too thick, add a little more broth as needed.
  12. 12. Finely chop the parsley and stir it into the pan at the end.
  13. 13. Season the dish to taste with a pinch of sugar, lemon juice, salt, and cayenne pepper.
