🍽️ White Beans in Tomato Sauce

Ingredients
- 250 g dried white beans (e.g. cannellini)
- 8 tomatoes
- 2 onions
- 2 garlic cloves
- 3 tbsp olive oil
- 1 tbsp tomato paste
- 500 ml vegetable broth
- 2 tbsp fresh chopped parsley
- 1 pinch raw cane sugar
- 1 dash lemon juice
- salt
- cayenne pepper
Instructions
- 1. Place the white beans in a bowl and cover them with cold water. Let them soak for at least 12 hours, preferably overnight.
- 2. Drain the soaking water and let the beans drain well.
- 3. Pour hot water over the tomatoes, immediately shock them in cold water, and peel off the skin.
- 4. Quarter the peeled tomatoes, remove the core, and chop the flesh into small pieces.
- 5. Peel the onions and garlic and dice them finely.
- 6. Heat oil in a large pan and sauté the onions and garlic until translucent but not brown.
- 7. Stir in the tomato paste and deglaze the pan with a splash of vegetable broth.
- 8. Add the prepared tomatoes and the drained beans to the pan.
- 9. Pour in a little more vegetable broth until the ingredients are almost covered.
- 10. Let the mixture simmer on low heat for about 45 minutes, stirring occasionally, until the beans are tender.
- 11. If the sauce becomes too thick, add a little more broth as needed.
- 12. Finely chop the parsley and stir it into the pan at the end.
- 13. Season the dish to taste with a pinch of sugar, lemon juice, salt, and cayenne pepper.
