🍽️ White beans with sage

Ingredients
- 200 g dried white beans
- 4 tomatoes
- 2 garlic cloves
- 2 tbsp white wine vinegar
- 2 tbsp lemon juice
- 2 tbsp freshly chopped sage
- 0.5 tsp liquid honey
- 4 tbsp olive oil
- 0.5 tsp medium-hot mustard
- sea salt
- pepper (from the mill)
Instructions
- 1. Place the white beans in a bowl and cover them with cold water.
- 2. Let the beans soak in the water for at least 12 hours, preferably overnight.
- 3. Pour off the soaking water the next day.
- 4. Cook the beans in fresh boiling water for about 40 minutes until tender.
- 5. Wash the tomatoes thoroughly.
- 6. Cut the tomatoes into quarters and remove the core.
- 7. Cut the tomato flesh into thin strips.
- 8. Peel the garlic cloves.
- 9. Mince the garlic very finely.
- 10. Whisk the vinegar with the lemon juice, the sage leaves, the minced garlic, the honey, and the mustard in a small bowl.
- 11. Stir the oil into the vinegar mixture.
- 12. Season the dressing with salt and pepper to taste.
- 13. Pour the dressing over the cooked beans.
- 14. Gently mix the beans with the tomato strips.
- 15. Place the bowl in the refrigerator, covered.
- 16. Let the beans marinate for at least 2 hours.
- 17. Taste the dish again before serving and adjust the seasoning if necessary.
