  1. 1. Place the white beans in a bowl and cover them with cold water.
  2. 2. Let the beans soak in the water for at least 12 hours, preferably overnight.
  3. 3. Pour off the soaking water the next day.
  4. 4. Cook the beans in fresh boiling water for about 40 minutes until tender.
  5. 5. Wash the tomatoes thoroughly.
  6. 6. Cut the tomatoes into quarters and remove the core.
  7. 7. Cut the tomato flesh into thin strips.
  8. 8. Peel the garlic cloves.
  9. 9. Mince the garlic very finely.
  10. 10. Whisk the vinegar with the lemon juice, the sage leaves, the minced garlic, the honey, and the mustard in a small bowl.
  11. 11. Stir the oil into the vinegar mixture.
  12. 12. Season the dressing with salt and pepper to taste.
  13. 13. Pour the dressing over the cooked beans.
  14. 14. Gently mix the beans with the tomato strips.
  15. 15. Place the bowl in the refrigerator, covered.
  16. 16. Let the beans marinate for at least 2 hours.
  17. 17. Taste the dish again before serving and adjust the seasoning if necessary.
