🍽️ Creamy white beans with parsnips and apple

Ingredients
- 250 g dried large white beans
- 400 g parsnips
- 2 shallots
- 2 tbsp olive oil
- 30 g tomato paste (2 tbsp)
- 200 ml vegetable broth
- salt
- pepper
- 1 tsp ground coriander
- 0.5 tbsp paprika powder
- 5 g marjoram (4 sprigs)
- 5 g parsley (4 sprigs)
- 2 apples
- 15 g butter (1 tbsp)
Instructions
- 1. Place the white beans in a bowl and cover them with enough cold water. Let them soak overnight.
- 2. The next day, drain the soaking water. Rinse the beans briefly.
- 3. Put the beans in a pot and cover them with 1.5 liters of fresh water.
- 4. Cook the beans until tender over low heat. This takes about one and a half to two hours.
- 5. Drain the cooked beans into a colander. Rinse them under running water and let them drain well.
- 6. Peel the parsnips and remove the tough core.
- 7. Cut the parsnips into small cubes of about 1.5 centimeters.
- 8. Peel the shallots and chop them finely.
- 9. Heat some oil in a large pot.
- 10. Sauté the chopped shallots for two minutes over medium heat.
- 11. Add the parsnip cubes and sauté them for four minutes.
- 12. Stir in tomato paste and let it caramelize slightly for two minutes.
- 13. Add the drained beans to the pot and stir them in.
- 14. Pour in the broth.
- 15. Season everything with salt, pepper, coriander, and paprika powder.
- 16. Wash the marjoram and the parsley.
- 17. Shake the herbs dry.
- 18. Pluck the leaves off the marjoram and parsley stems.
- 19. Take half of the chopped herbs and stir them into the beans.
- 20. Let the bean mixture simmer over low heat for ten minutes.
- 21. Wash the apples thoroughly.
- 22. Core the apples.
- 23. Slice the apples into thin rings.
- 24. Heat butter in a frying pan.
- 25. Fry the apple rings on both sides for four minutes each over medium heat until golden brown.
- 26. Add the remaining marjoram to the apples in the pan.
- 27. Season the apples with salt and pepper.
- 28. Serve the bean and parsnip mixture on a plate.
- 29. Garnish the dish with the fried apple rings.
- 30. Sprinkle the remaining parsley on top.
