  1. 1. Place the white beans in a bowl and cover them with enough cold water. Let them soak overnight.
  2. 2. The next day, drain the soaking water. Rinse the beans briefly.
  3. 3. Put the beans in a pot and cover them with 1.5 liters of fresh water.
  4. 4. Cook the beans until tender over low heat. This takes about one and a half to two hours.
  5. 5. Drain the cooked beans into a colander. Rinse them under running water and let them drain well.
  6. 6. Peel the parsnips and remove the tough core.
  7. 7. Cut the parsnips into small cubes of about 1.5 centimeters.
  8. 8. Peel the shallots and chop them finely.
  9. 9. Heat some oil in a large pot.
  10. 10. Sauté the chopped shallots for two minutes over medium heat.
  11. 11. Add the parsnip cubes and sauté them for four minutes.
  12. 12. Stir in tomato paste and let it caramelize slightly for two minutes.
  13. 13. Add the drained beans to the pot and stir them in.
  14. 14. Pour in the broth.
  15. 15. Season everything with salt, pepper, coriander, and paprika powder.
  16. 16. Wash the marjoram and the parsley.
  17. 17. Shake the herbs dry.
  18. 18. Pluck the leaves off the marjoram and parsley stems.
  19. 19. Take half of the chopped herbs and stir them into the beans.
  20. 20. Let the bean mixture simmer over low heat for ten minutes.
  21. 21. Wash the apples thoroughly.
  22. 22. Core the apples.
  23. 23. Slice the apples into thin rings.
  24. 24. Heat butter in a frying pan.
  25. 25. Fry the apple rings on both sides for four minutes each over medium heat until golden brown.
  26. 26. Add the remaining marjoram to the apples in the pan.
  27. 27. Season the apples with salt and pepper.
  28. 28. Serve the bean and parsnip mixture on a plate.
  29. 29. Garnish the dish with the fried apple rings.
  30. 30. Sprinkle the remaining parsley on top.
