🍽️ Creamy White Bean Dip

Ingredients
- 1 onion
- 2 garlic cloves
- 4 tbsp olive oil
- 400 g white beans (can, drained weight)
- 2 sprigs thyme
- 1 tsp lemon juice
- 2 tbsp vegan crème fraîche
- salt
- white pepper
Instructions
- 1. Peel the onion and the garlic clove.
- 2. Dice the onion and garlic into very small cubes.
- 3. Heat 1 tablespoon of olive oil in a pan over medium heat.
- 4. Sauté the onions and garlic for 3 minutes until translucent.
- 5. Drain the white beans into a colander.
- 6. Rinse the beans under running water.
- 7. Let the beans drain well.
- 8. Wash the thyme sprigs.
- 9. Shake the thyme sprigs dry.
- 10. Pluck the small thyme leaves off the stems.
- 11. Finely chop the thyme leaves.
- 12. Place the beans, sautéed onions, and garlic into a tall container.
- 13. Add 2 tablespoons of olive oil.
- 14. Add half of the chopped thyme leaves.
- 15. Add lemon juice.
- 16. Add crème fraîche.
- 17. Season with salt and pepper.
- 18. Blend everything with a hand blender until the mixture is creamy.
- 19. If necessary, add a little water to adjust the consistency.
- 20. Spoon the dip into a bowl.
- 21. Drizzle the dip with a little remaining olive oil.
- 22. Sprinkle the dip with the remaining thyme.
