  1. 1. Peel the onion and the garlic clove.
  2. 2. Dice the onion and garlic into very small cubes.
  3. 3. Heat 1 tablespoon of olive oil in a pan over medium heat.
  4. 4. Sauté the onions and garlic for 3 minutes until translucent.
  5. 5. Drain the white beans into a colander.
  6. 6. Rinse the beans under running water.
  7. 7. Let the beans drain well.
  8. 8. Wash the thyme sprigs.
  9. 9. Shake the thyme sprigs dry.
  10. 10. Pluck the small thyme leaves off the stems.
  11. 11. Finely chop the thyme leaves.
  12. 12. Place the beans, sautéed onions, and garlic into a tall container.
  13. 13. Add 2 tablespoons of olive oil.
  14. 14. Add half of the chopped thyme leaves.
  15. 15. Add lemon juice.
  16. 16. Add crème fraîche.
  17. 17. Season with salt and pepper.
  18. 18. Blend everything with a hand blender until the mixture is creamy.
  19. 19. If necessary, add a little water to adjust the consistency.
  20. 20. Spoon the dip into a bowl.
  21. 21. Drizzle the dip with a little remaining olive oil.
  22. 22. Sprinkle the dip with the remaining thyme.
