🍰 Grape Cake with Pudding Filling

Ingredients
- 175 g flour
- 1 pinch baking powder
- 100 g sugar
- 1 packet vanilla sugar
- 1 egg (size M)
- 75 g butter
- 2 eggs (size M)
- 2 tbsp hot water
- 100 g sugar
- 1 packet vanilla sugar
- 100 g flour
- 1 level tsp baking powder
- 50 g ground almond kernels
- 30 g melted, cooled butter
- 600 ml milk
- 2 packets vanilla pudding powder
- 150 g sugar
- 400 g cottage cheese
- 200 g seedless grapes
Instructions
- 1. Put flour, baking powder, sugar, and vanilla sugar into a bowl and mix them.
- 2. Add the egg and the butter cut into small pieces.
- 3. Crush the mixture with a knife until crumbly lumps form.
- 4. Knead the crumbs quickly with your hands into a smooth dough.
- 5. Sprinkle some flour on a work surface and roll out the dough on it.
- 6. The dough should be the size of a baking tray measuring 38 by 28 centimeters.
- 7. Wrap the dough around the rolling pin and carefully unroll it onto the greased baking tray.
- 8. Press the dough firmly into the corners and edges of the tray.
- 9. Beat the eggs with water, sugar, and vanilla sugar in a separate bowl until frothy.
- 10. Mix flour and baking powder and sift the mixture over the egg mixture.
- 11. Add the almonds and the butter and stir everything well.
- 12. Spread the sponge cake mixture evenly over the shortcrust base.
- 13. Preheat the oven to 200 degrees (Gas level 3 to 4 or fan 180 degrees).
- 14. Bake the cake for about 15 minutes in the preheated oven.
- 15. Mix 200 milliliters of milk with the pudding powder in a small bowl.
- 16. Bring the remaining milk to a boil in a pot.
- 17. Stir the mixed pudding mixture into the boiling milk.
- 18. Allow the mixture to come to a boil once while stirring constantly.
- 19. Stir sugar and cottage cheese into the pudding mixture.
- 20. Rinse the grapes and cut them in half.
- 21. Gently fold the grapes into the pudding mixture.
- 22. Spread the filling evenly over the sponge base.
- 23. Bake the cake for another 30 minutes.
