🍽️ Homemade Grape Jelly

Ingredients
- 1.2 kg red grapes
- 200 ml red wine (e.g. Pinot Noir)
- 1 untreated orange
- 2 cardamom pods
- 1 kg jam sugar
- 40 ml grappa
Instructions
- 1. Rinse the grapes under running water.
- 2. Remove the berries from the stems and place them in a pot.
- 3. Mash the grapes slightly with a potato masher.
- 4. Pour the wine over the grapes and bring the mixture to a boil.
- 5. Reduce the heat and let the fruits simmer gently for about 20 minutes until they break down.
- 6. Wash the orange thoroughly under hot water.
- 7. Slice the orange into thin rounds.
- 8. Add the orange slices and cardamom to the grape mixture.
- 9. Allow the mixture to cool down.
- 10. Line a sieve with a clean cloth.
- 11. Pour the cooled mixture into the sieve to let the juice drip through.
- 12. Catch the juice in a pot.
- 13. Squeeze the remaining fruits in the cloth to extract the last juice.
- 14. Measure the extracted juice.
- 15. Add the same amount of sugar to the juice.
- 16. Stir the mixture and bring it to a boil.
- 17. Let the jelly mixture boil vigorously for about 5 minutes.
- 18. Perform a setting test to check the consistency.
- 19. Stir the grappa into the hot jelly mixture.
- 20. Fill the mixture immediately into prepared jars.
- 21. Seal the jars immediately after filling.
- 22. Allow the jars to cool down completely.
