🍰 Grape Jelly with Almond Foam

Ingredients
- 400 g seedless grapes (200 g each green and blue grapes)
- 2 sheets white gelatin
- 300 ml light grape juice
- 1 piece cinnamon stick (approx. 4 cm long)
- 2 cloves
- 1 star anise
- 100 g peeled almond kernels
- 2 tsp powdered sugar
- 200 ml milk (1.5% fat)
Instructions
- 1. Wash the grapes thoroughly.
- 2. Remove the grapes from the stems.
- 3. Cut the individual grapes in half.
- 4. Distribute the grapes evenly among four glasses or small bowls.
- 5. Soak the gelatin in a bowl of cold water.
- 6. Pour the grape juice into a small saucepan.
- 7. Add cinnamon, cloves, and star anise to the juice.
- 8. Warm the spices together with the juice in the pot.
- 9. Squeeze the soaked gelatin well.
- 10. Stir the gelatin into the warm grape juice until it has completely dissolved.
- 11. Remove the pot from the heat.
- 12. Let the liquid cool down.
- 13. Pour the cooled mixture through a fine sieve into a bowl.
- 14. Pour the filtered liquid over the grapes in the glasses.
- 15. Place the glasses in the refrigerator.
- 16. Let the jelly set for at least four hours.
- 17. Add the almonds and powdered sugar to a frying pan.
- 18. Roast the almonds until golden brown without adding extra fat.
- 19. Pour the milk into the pan with the roasted almonds.
- 20. Bring the mixture to a boil once.
- 21. Remove the pan from the heat.
- 22. Let the almond milk steep for 30 to 40 minutes.
- 23. Then let the mixture cool down.
- 24. Pour the cooled almond milk through a fine sieve into a tall container.
- 25. Whisk the milk with a milk frother until it forms a fine-pored foam.
- 26. Place one tablespoon of foam on each grape jelly.
- 27. Serve the dessert immediately.
