🍽️ Fruity Wine Foam Cream

Ingredients
- 6 egg yolks
- 200 g sugar
- 250 ml very dry white wine
- Fruit (or berries)
Instructions
- 1. Put the egg yolks and sugar into a metal bowl.
- 2. Whisk the mixture until it is creamy.
- 3. Place the bowl over a pot with gently simmering water (water bath).
- 4. Add the wine slowly while stirring constantly.
- 5. Continue whisking until the cream is frothy and its volume has doubled.
- 6. Wash the fruit and pat it dry.
- 7. Cut the fruit into small pieces if necessary.
- 8. Layer the fruit and the wine cream alternately into four glasses.
- 9. Place the glasses in the refrigerator for one hour.
- 10. Take the glasses out and serve the cream.
