  1. 1. Put the egg yolks and sugar into a metal bowl.
  2. 2. Whisk the mixture until it is creamy.
  3. 3. Place the bowl over a pot with gently simmering water (water bath).
  4. 4. Add the wine slowly while stirring constantly.
  5. 5. Continue whisking until the cream is frothy and its volume has doubled.
  6. 6. Wash the fruit and pat it dry.
  7. 7. Cut the fruit into small pieces if necessary.
  8. 8. Layer the fruit and the wine cream alternately into four glasses.
  9. 9. Place the glasses in the refrigerator for one hour.
  10. 10. Take the glasses out and serve the cream.
