  1. 1. Put sugar, honey, butter, cream, lemon juice, lemon zest, and vanilla sugar into a pot.
  2. 2. Heat the mixture while stirring constantly until it boils.
  3. 3. Remove the pot from the heat and let the mixture cool down completely.
  4. 4. Place a bowl over a pot of hot water (hot water bath).
  5. 5. Whisk the eggs together with the spices in the hot water bath until foamy.
  6. 6. Add the cooled honey-sugar mixture gradually to the egg foam.
  7. 7. Stir everything until a uniform, airy mass is formed.
  8. 8. Mix flour and baking soda (leavening agent) in a separate bowl.
  9. 9. Fold the flour mixture into the egg mixture until a homogeneous dough is formed.
  10. 10. Wrap the dough tightly in plastic wrap.
  11. 11. Place the dough in the refrigerator overnight to rest.
  12. 12. Preheat the oven to 180 degrees Celsius with top and bottom heat the next day.
  13. 13. Take the dough out of the refrigerator and knead it briefly again.
  14. 14. Lightly dust a work surface with flour.
  15. 15. Roll out the dough on the floured surface to a thickness of approx. 5 millimeters.
  16. 16. Cut the dough into equal-sized rectangles of approx. 3 x 8 centimeters.
  17. 17. Place the dough pieces on two baking sheets lined with baking paper.
  18. 18. Bake the lebkuchen one after the other in the hot oven.
  19. 19. Bake each batch for approx. 10 minutes until they are light brown.
  20. 20. Remove the trays from the oven and let the lebkuchen cool down completely on a wire rack.
  21. 21. Mix all ingredients for the glaze well together in a small bowl.
  22. 22. Brush the cooled lebkuchen with the glaze.
  23. 23. Let the glazed lebkuchen dry in the air.
