🍰 Crunchy Lebkuchen with Wine-Biter Glaze

Ingredients
- 100 g Sugar (fine crystal)
- 100 g Honey
- 60 g room-temperature Butter
- 1 tbsp Whipping cream
- 1 Organic Lemon (zest and juice)
- 1 tbsp Vanilla sugar
- 2 Eggs
- 1 pinch Salt
- 1 tsp Gingerbread spice
- 300 g Flour
- 0.5 tsp Baking soda
- Flour (for working)
- 1 Egg white (for brushing)
- 1 tsp Lemon juice
- 200 g Powdered sugar
Instructions
- 1. Put sugar, honey, butter, cream, lemon juice, lemon zest, and vanilla sugar into a pot.
- 2. Heat the mixture while stirring constantly until it boils.
- 3. Remove the pot from the heat and let the mixture cool down completely.
- 4. Place a bowl over a pot of hot water (hot water bath).
- 5. Whisk the eggs together with the spices in the hot water bath until foamy.
- 6. Add the cooled honey-sugar mixture gradually to the egg foam.
- 7. Stir everything until a uniform, airy mass is formed.
- 8. Mix flour and baking soda (leavening agent) in a separate bowl.
- 9. Fold the flour mixture into the egg mixture until a homogeneous dough is formed.
- 10. Wrap the dough tightly in plastic wrap.
- 11. Place the dough in the refrigerator overnight to rest.
- 12. Preheat the oven to 180 degrees Celsius with top and bottom heat the next day.
- 13. Take the dough out of the refrigerator and knead it briefly again.
- 14. Lightly dust a work surface with flour.
- 15. Roll out the dough on the floured surface to a thickness of approx. 5 millimeters.
- 16. Cut the dough into equal-sized rectangles of approx. 3 x 8 centimeters.
- 17. Place the dough pieces on two baking sheets lined with baking paper.
- 18. Bake the lebkuchen one after the other in the hot oven.
- 19. Bake each batch for approx. 10 minutes until they are light brown.
- 20. Remove the trays from the oven and let the lebkuchen cool down completely on a wire rack.
- 21. Mix all ingredients for the glaze well together in a small bowl.
- 22. Brush the cooled lebkuchen with the glaze.
- 23. Let the glazed lebkuchen dry in the air.
