  1. 1. Peel the onions, the celery (300 g), the leek, and the carrots.
  2. 2. Cut the vegetables into fine cubes.
  3. 3. Mix the minced meat in a bowl with the egg white, the ice cubes, the parsley, the masterwort, pepper, juniper, and allspice.
  4. 4. Add the diced vegetables and the meat mixture to a pot.
  5. 5. Mix everything well with the cold broth.
  6. 6. Bring the mixture to a boil slowly while stirring occasionally.
  7. 7. Let the broth simmer for approx. 30 minutes on low heat without stirring it further.
  8. 8. Strain the broth carefully through a cloth to remove the meat cake at the bottom.
  9. 9. Slice the remaining celery into thin rounds.
  10. 10. Cut stars out of the celery slices.
  11. 11. Blanch the stars briefly in hot salted water (cook briefly in boiling water).
  12. 12. Rinse the stars with cold water and let them drain.
  13. 13. Distribute the celery stars onto small bowls or plates.
  14. 14. Bring the clear broth to a boil again.
  15. 15. Season the broth with salt.
  16. 16. Pour the hot broth into the bowls over the stars.
  17. 17. Sprinkle the soup with chives and serve.
