🍽️ Festive Vegetable Star Soup

Ingredients
- 2 onions
- 400 g celery
- 1 stalk leek
- 2 carrots
- 4 egg whites
- 300 g ground beef
- 1 handful ice cubes
- 2 parsley
- 1 sprig lovage
- 1 tsp peppercorns
- 4 juniper berries
- 4 allspice berries
- 1 l beef broth
- salt
- chive rolls (for garnish)
Instructions
- 1. Peel the onions, the celery (300 g), the leek, and the carrots.
- 2. Cut the vegetables into fine cubes.
- 3. Mix the minced meat in a bowl with the egg white, the ice cubes, the parsley, the masterwort, pepper, juniper, and allspice.
- 4. Add the diced vegetables and the meat mixture to a pot.
- 5. Mix everything well with the cold broth.
- 6. Bring the mixture to a boil slowly while stirring occasionally.
- 7. Let the broth simmer for approx. 30 minutes on low heat without stirring it further.
- 8. Strain the broth carefully through a cloth to remove the meat cake at the bottom.
- 9. Slice the remaining celery into thin rounds.
- 10. Cut stars out of the celery slices.
- 11. Blanch the stars briefly in hot salted water (cook briefly in boiling water).
- 12. Rinse the stars with cold water and let them drain.
- 13. Distribute the celery stars onto small bowls or plates.
- 14. Bring the clear broth to a boil again.
- 15. Season the broth with salt.
- 16. Pour the hot broth into the bowls over the stars.
- 17. Sprinkle the soup with chives and serve.
