  1. 1. Place the ham (if it is still tied with kitchen twine) into a large pot.
  2. 2. Wash the onion, carrot, and leek and cut them into coarse cubes.
  3. 3. Add the chopped vegetables, pepper, coriander, bay leaves, and cinnamon stick to the ham.
  4. 4. Pour in cold water until the meat is completely covered.
  5. 5. Bring the water to a boil and then let the ham simmer covered on low heat for about 2.5 hours.
  6. 6. Slice the oranges.
  7. 7. Remove the cooked ham from the broth and let it cool for a short time.
  8. 8. Remove the kitchen twine and peel off the rind.
  9. 9. Stab the thin layer of fat with cloves.
  10. 10. Insert the orange slices between the cloves into the fat layer.
  11. 11. Place the ham into a roasting pan.
  12. 12. Preheat the oven to 160 degrees Celsius fan-assisted.
  13. 13. Mix the jam with mustard and sugar to make the glaze.
  14. 14. Brush the ham with the glaze.
  15. 15. Roast the ham in the oven for about 40 minutes until it is brown and crispy.
  16. 16. Brush the ham occasionally with the remaining glaze while roasting.
