🍽️ Christmas Ham with Jam Glaze

Ingredients
- 2 kg ham (gammon joint)
- 1 onion
- 1 carrot
- 1 stalk leek
- 1 tsp peppercorns
- 1 tsp coriander seeds
- 2 bay leaves
- 1 cinnamon stick
- 2 oranges
- 1 tbsp clove
- 125 g jam (e.g. orange)
- 30 g coarse mustard
- 1 tsp brown sugar
Instructions
- 1. Place the ham (if it is still tied with kitchen twine) into a large pot.
- 2. Wash the onion, carrot, and leek and cut them into coarse cubes.
- 3. Add the chopped vegetables, pepper, coriander, bay leaves, and cinnamon stick to the ham.
- 4. Pour in cold water until the meat is completely covered.
- 5. Bring the water to a boil and then let the ham simmer covered on low heat for about 2.5 hours.
- 6. Slice the oranges.
- 7. Remove the cooked ham from the broth and let it cool for a short time.
- 8. Remove the kitchen twine and peel off the rind.
- 9. Stab the thin layer of fat with cloves.
- 10. Insert the orange slices between the cloves into the fat layer.
- 11. Place the ham into a roasting pan.
- 12. Preheat the oven to 160 degrees Celsius fan-assisted.
- 13. Mix the jam with mustard and sugar to make the glaze.
- 14. Brush the ham with the glaze.
- 15. Roast the ham in the oven for about 40 minutes until it is brown and crispy.
- 16. Brush the ham occasionally with the remaining glaze while roasting.
- 17. Let the ham cool down briefly before slicing.
- 18. Serve the ham warm or cold, for example with peach relish.
