  8. 8. Fold in three-quarters of the almond-cinnamon mixture into the egg whites.
  9. 9. Stir until a moldable dough forms.
  10. 10. Place the covered dough in the refrigerator for 1 hour.
  11. 11. Dust a work surface with sugar.
  12. 12. Roll out the dough to a thickness of 6 millimeters.
  13. 13. Cut out stars from the dough.
  14. 14. Place the cookies on a baking sheet lined with baking paper.
  15. 15. Brush the cookies with the reserved egg white mixture.
