Ingredients
- 300 g Sugar
- 3 Egg whites
- 2 tsp Lemon juice
- 500 g Ground almond kernels
- 3 tsp Cinnamon
- Sugar (for rolling out)
Instructions
- 1. Beat the egg whites until very stiff.
- 2. Slowly stir in the sugar.
- 3. Add the lemon juice.
- 4. Beat the mixture for 10 minutes on the highest setting with a hand mixer.
- 5. Remove 4 tablespoons of the mixture.
- 6. Store this portion in a covered cup.
- 7. Mix the almonds with the cinnamon.
- 8. Fold in three-quarters of the almond-cinnamon mixture into the egg whites.
- 9. Stir until a moldable dough forms.
- 10. Place the covered dough in the refrigerator for 1 hour.
- 11. Dust a work surface with sugar.
- 12. Roll out the dough to a thickness of 6 millimeters.
- 13. Cut out stars from the dough.
- 14. Place the cookies on a baking sheet lined with baking paper.
- 15. Brush the cookies with the reserved egg white mixture.
- 16. Bake the cookies at 180 degrees for 12 minutes.
