🍰 Jam Cookies with Almond Glaze

Ingredients
- 135 g flour
- 125 g whole wheat flour
- 180 g ground almond kernels
- 50 g coconut blossom sugar
- 1 pinch salt
- 0.5 vanilla pod (seeds)
- 1 egg
- 200 g butter
- 150 g strawberry jam
Instructions
- 1. Mix 125 grams of whole wheat flour, 150 grams of ground almonds, coconut blossom sugar, and a pinch of salt in a bowl.
- 2. Slice a vanilla pod lengthwise and scrape out the seeds with a knife.
- 3. Add the vanilla seeds to the flour mixture and stir everything well.
- 4. Pour the dry mixture onto a clean work surface and form a mound.
- 5. Press a well into the center of the flour mound with your palm.
- 6. Crack an egg directly into this well.
- 7. Distribute soft butter in small pieces around the egg on the flour.
- 8. Knead the ingredients quickly into a smooth dough using your hands.
- 9. Shape the dough into a ball.
- 10. Wrap the dough ball tightly in cling film.
- 11. Place the foil in the refrigerator for at least 30 minutes.
- 12. Preheat the oven to 180 degrees Celsius conventional heat (or 160 degrees Celsius fan-forced).
- 13. Dust the work surface with a little remaining flour.
- 14. Take the dough out of the fridge and roll it out to a thickness of 0.4 centimeters.
- 15. Cut circles out of the dough using a round cutter (approx. 3 centimeters in diameter).
- 16. Divide the dough circles into two halves.
- 17. Cut small shapes like hearts or stars out of the first half of the circles.
- 18. Place all full dough circles on a baking sheet lined with baking paper.
- 19. Bake the cookies in the preheated oven for about 10 minutes until golden brown.
- 20. Warm the jam slightly in a small saucepan.
- 21. Strain the warm jam through a fine sieve to remove lumps.
- 22. Take the baked cookies out of the oven.
- 23. Carefully loosen the cookies from the baking paper.
- 24. Let the cookies cool completely on a wire rack.
- 25. Lightly moisten the bottom of the cookies with the cut-out holes with water.
- 26. Dust these cookies with ground almonds.
- 27. Spread the full cookies thinly with the strained jam.
- 28. Place a cookie with almond glaze on top of a jam cookie.
- 29. Press the two halves together lightly.
- 30. Let the cookies dry briefly before serving.
