Ingredients
- 150 g honey
- 75 g brown sugar
- 75 g butter
- 3 tbsp milk
- 2 tsp gingerbread spice
- 2 eggs
- 250 g flour
- 1 tsp baking powder
- 1 tbsp cocoa powder
- 50 g chocolate shavings
- 1 jar Amarena cherries (450 g content)
- 1 mini muffin baking tray (with 12 indentations)
- powdered sugar (for dusting)
- fat (for the mold)
- small paper liners
Instructions
- 1. Heat honey, sugar, butter, and milk in a pot while stirring constantly until the sugar is completely dissolved.
- 2. Stir the gingerbread spice into the warm mixture and then let it cool down.
- 3. Whisk the eggs into the cooled honey mixture.
- 4. Mix flour, baking powder, and cocoa in a separate bowl.
- 5. Gently fold the flour mixture and the chocolate shavings into the honey mixture.
- 6. Grease the muffin tin with some fat.
- 7. Fill one-third of the batter into each muffin cup.
- 8. Press one cherry into the center of the batter in each cup.
- 9. Bake the muffins in the preheated oven at 180 degrees on the middle rack for 15 to 20 minutes.
- 10. Carefully remove the muffins from the molds after they have cooled slightly.
- 11. Dust the finished muffins with powdered sugar.
- 12. Repeat the process to bake another 24 mini muffins.
