🍰 Christmas Ice Parfait with Cookies

Ingredients
- 150 g Speculoos
- 4 egg yolks
- 100 g sugar
- 50 g vanilla sugar
- 100 ml apple juice
- 400 g whipping cream (fresh)
- white chocolate shavings
Instructions
- 1. Heat a pot of water until it is hot but not boiling.
- 2. Place egg yolks, sugar, vanilla sugar, and apple juice into a stainless steel bowl.
- 3. Place the bowl over the hot water, ensuring it does not touch the water.
- 4. Mix the ingredients well and beat them until they are white and creamy.
- 5. Remove the bowl from the heat and place it in a cold water bath.
- 6. Continue beating the mixture until it has cooled down completely.
- 7. Crumble the Speculoos cookies into small pieces.
- 8. Gently fold the cookie pieces into the cooled mixture.
- 9. Whip the cream until stiff.
- 10. Fold the whipped cream into the cookie mixture.
- 11. Pour the mixture into a mold and smooth the surface.
- 12. Place the mold in the freezer overnight.
- 13. Dip the mold briefly into hot water before serving the parfait.
- 14. Turn the parfait out of the mold.
- 15. Cut the parfait into 12 equal slices.
- 16. Garnish two slices each with grated white chocolate.
- 17. Serve the slices.
