  1. 1. Heat a pot of water until it is hot but not boiling.
  2. 2. Place egg yolks, sugar, vanilla sugar, and apple juice into a stainless steel bowl.
  3. 3. Place the bowl over the hot water, ensuring it does not touch the water.
  4. 4. Mix the ingredients well and beat them until they are white and creamy.
  5. 5. Remove the bowl from the heat and place it in a cold water bath.
  6. 6. Continue beating the mixture until it has cooled down completely.
  7. 7. Crumble the Speculoos cookies into small pieces.
  8. 8. Gently fold the cookie pieces into the cooled mixture.
  9. 9. Whip the cream until stiff.
  10. 10. Fold the whipped cream into the cookie mixture.
  11. 11. Pour the mixture into a mold and smooth the surface.
  12. 12. Place the mold in the freezer overnight.
  13. 13. Dip the mold briefly into hot water before serving the parfait.
  14. 14. Turn the parfait out of the mold.
  15. 15. Cut the parfait into 12 equal slices.
  16. 16. Garnish two slices each with grated white chocolate.
  17. 17. Serve the slices.
