🍰 French Christmas Cake

Ingredients
- 6 egg yolks
- 80 g sugar
- 1 pinch salt
- 1 knife tip grated lemon zest
- 3 egg whites
- 2 tbsp cornstarch
- 60 g flour
- 400 g soft butter
- 1 packet chocolate pudding powder
- 2 tbsp sugar
- 0.5 l milk
- 50 g dark chocolate
- 50 g powdered sugar
- 200 g fondant
- cocoa powder
- powdered sugar
- chocolate shavings
Instructions
- 1. Whisk the egg yolks with half of the sugar, a pinch of salt, and the lemon zest until creamy.
- 2. Beat the egg whites until stiff and slowly stir in the remaining sugar.
- 3. Gently fold the egg yolk mixture into the egg whites.
- 4. Mix the flour and cornstarch and sift the mixture over the batter.
- 5. Carefully fold in the flour mixture.
- 6. Line a baking tray with parchment paper and spread the mixture evenly on it.
- 7. Preheat the oven to 200 °C and bake the dough for 10 to 12 minutes.
- 8. Turn the baked sponge out onto a sugar-dusted kitchen towel and peel off the parchment paper.
- 9. Place the Christmas chocolate log in the refrigerator for at least 2 hours.
- 10. Shape small mushrooms from fondant and dust them with cocoa.
- 11. Place the mushrooms on the log.
- 12. Decorate the log with chocolate shavings and powdered sugar.
