  1. 1. Whisk the egg yolks with half of the sugar, a pinch of salt, and the lemon zest until creamy.
  2. 2. Beat the egg whites until stiff and slowly stir in the remaining sugar.
  3. 3. Gently fold the egg yolk mixture into the egg whites.
  4. 4. Mix the flour and cornstarch and sift the mixture over the batter.
  5. 5. Carefully fold in the flour mixture.
  6. 6. Line a baking tray with parchment paper and spread the mixture evenly on it.
  7. 7. Preheat the oven to 200 °C and bake the dough for 10 to 12 minutes.
  8. 8. Turn the baked sponge out onto a sugar-dusted kitchen towel and peel off the parchment paper.
  9. 9. Place the Christmas chocolate log in the refrigerator for at least 2 hours.
  10. 10. Shape small mushrooms from fondant and dust them with cocoa.
  11. 11. Place the mushrooms on the log.
  12. 12. Decorate the log with chocolate shavings and powdered sugar.
