  1. 1. Cut the watermelon in half lengthwise.
  2. 2. Slice the halves into pieces about 5 millimeters thick.
  3. 3. Remove the green rind and any seeds from the slices.
  4. 4. Trim the radishes and wash them thoroughly.
  5. 5. Grate the radishes into thin slices.
  6. 6. Peel the onion and cut it in half.
  7. 7. Cut the onion halves into thin strips.
  8. 8. Wash the mint and the microgreens.
  9. 9. Shake the greens dry.
  10. 10. Arrange the watermelon slices on plates or a large platter.
  11. 11. Distribute the radish slices and onion strips evenly over the melon.
  12. 12. Sprinkle the mint and microgreens over the salad.
  13. 13. Add small dollops of goat cheese on top.
  14. 14. Whisk vinegar, broth, salt, pepper, and oil together in a small bowl.
  15. 15. Drizzle the dressing mixture over the salad.
  16. 16. Grind some fresh pepper over it.
  17. 17. Sprinkle Fleur de Sel (fine sea salt) on top for garnish.
  18. 18. Serve the salad immediately.
