🥗 Fresh Watermelon and Radish Salad

Ingredients
- 600 g medium-sized watermelon (0.25 medium-sized watermelons)
- 0.5 bunch radishes
- 1 mild white onion
- 5 g mint (1 handful)
- 5 g micro-herbs (1 handful; e.g. basil or cress)
- 150 g goat cream cheese (30 % fat in dry matter)
- 1 tbsp apple cider vinegar
- 40 ml vegetable broth
- salt
- pepper (from the mill)
- 3 tbsp olive oil
- fine fleur de sel
Instructions
- 1. Cut the watermelon in half lengthwise.
- 2. Slice the halves into pieces about 5 millimeters thick.
- 3. Remove the green rind and any seeds from the slices.
- 4. Trim the radishes and wash them thoroughly.
- 5. Grate the radishes into thin slices.
- 6. Peel the onion and cut it in half.
- 7. Cut the onion halves into thin strips.
- 8. Wash the mint and the microgreens.
- 9. Shake the greens dry.
- 10. Arrange the watermelon slices on plates or a large platter.
- 11. Distribute the radish slices and onion strips evenly over the melon.
- 12. Sprinkle the mint and microgreens over the salad.
- 13. Add small dollops of goat cheese on top.
- 14. Whisk vinegar, broth, salt, pepper, and oil together in a small bowl.
- 15. Drizzle the dressing mixture over the salad.
- 16. Grind some fresh pepper over it.
- 17. Sprinkle Fleur de Sel (fine sea salt) on top for garnish.
- 18. Serve the salad immediately.
