  3. 3. Squeeze the remaining fruit pulp to collect the juice.
  4. 4. Remove the seeds from the watermelon and cut the flesh into bite-sized pieces.
  5. 5. Wash the celery and remove the tough fibers.
  6. 6. Shred the celery into thin slices.
  7. 7. Rinse the tarragon and shake it dry.
  8. 8. Finely chop the tarragon leaves.
  9. 9. Whisk the orange juice with the sherry vinegar, maple syrup, and grape seed oil.
  10. 10. Season the dressing with salt and pepper.
  11. 11. Mix the orange segments, watermelon, and celery with the dressing.
  12. 12. Taste the salad one last time and adjust the seasoning if needed.
