🥗 Refreshing Watermelon and Orange Salad

Ingredients
- 4 blood oranges
- 600 g watermelon flesh
- 1 stalk celery
- 2 sprigs tarragon
- 2 tbsp sherry vinegar
- 2 tbsp maple syrup
- 2 tbsp grape seed oil
- salt
- pepper (from the mill)
Instructions
- 1. Cut off the peel of the oranges all around using a sharp knife.
- 2. Carefully separate the orange segments from the membranes and set them aside.
- 3. Squeeze the remaining fruit pulp to collect the juice.
- 4. Remove the seeds from the watermelon and cut the flesh into bite-sized pieces.
- 5. Wash the celery and remove the tough fibers.
- 6. Shred the celery into thin slices.
- 7. Rinse the tarragon and shake it dry.
- 8. Finely chop the tarragon leaves.
- 9. Whisk the orange juice with the sherry vinegar, maple syrup, and grape seed oil.
- 10. Season the dressing with salt and pepper.
- 11. Mix the orange segments, watermelon, and celery with the dressing.
- 12. Taste the salad one last time and adjust the seasoning if needed.
- 13. Let the salad marinate for about 30 minutes.
- 14. Taste the salad again after marinating.
- 15. Fold in the chopped tarragon leaves.
