🥗 Fresh Watermelon Salad with Mozzarella and Sautéed Shrimp

Ingredients
- 600 g watermelon (1 piece)
- 1 bunch basil
- 150 g mini mozzarella balls (9 % fat)
- 600 g shrimp (peeled; deveined)
- salt
- pepper
- 2 tbsp rapeseed oil
- 2 tbsp lemon juice
- 4 tbsp olive oil
- 1 tsp honey
Instructions
- 1. Remove the rind and seeds from the watermelon.
- 2. Cut the flesh into small, bite-sized cubes.
- 3. Wash the basil leaves under cold water.
- 4. Shake the leaves dry.
- 5. Slice the basil leaves into thin strips.
- 6. Let the mozzarella drain well in a colander.
- 7. Rinse the shrimp under cold water.
- 8. Season the shrimp with salt and pepper.
- 9. Heat rapeseed oil in a frying pan.
- 10. Fry the shrimp over high heat.
- 11. Cook them for about 2 to 3 minutes.
- 12. Fry them until golden brown on all sides.
- 13. Mix lemon juice and olive oil for the dressing.
- 14. Season the sauce with salt, pepper, and honey.
- 15. Divide the watermelon, mozzarella, basil, and shrimp among four bowls.
- 16. Drizzle the salad with the vinaigrette.
