🍽️ Fresh Watercress Salad with Peaches and Feta

Ingredients
- 150 g watercress
- 1 handful basil
- 4 peaches
- 2 tbsp apple cider vinegar
- 2 tbsp lemon juice
- 1 tsp honey
- 6 tbsp grapeseed oil
- salt
- pepper (from the mill)
- 2 tbsp pine nuts
- 150 g feta
Instructions
- 1. Rinse the watercress and basil under running water.
- 2. Let the vegetables and herbs drain well.
- 3. Pick the watercress leaves off the tough stems.
- 4. Roughly chop the basil with a knife.
- 5. Wash the peaches thoroughly.
- 6. Cut the peaches in half through the center.
- 7. Remove the pits from the peach halves.
- 8. Cut the peach halves into thin wedges.
- 9. Whisk the vinegar, lemon juice, honey, and oil together in a small bowl.
- 10. Season the dressing mixture with salt and pepper to taste.
- 11. Gently fold the peach wedges and watercress into the dressing mixture.
- 12. Divide the salad among the plates.
- 13. Sprinkle the pine nuts over the salad.
- 14. Crumble the feta cheese with your fingers over the top.
- 15. Serve the salad immediately.
