🍽️ Crunchy Wasabi Peanuts and Caramelized Almonds

Ingredients
- 250 g almond kernels
- 1 tsp rapeseed oil
- 200 g sugar
- 0.5 tsp cinnamon
- 1 tbsp wasabi paste
- 250 g peanut kernels (unsalted)
- vegetable oil (for the baking sheet)
Instructions
- 1. Preheat the oven to 150 degrees Celsius with fan setting.
- 2. Whisk the egg whites together with the salt until they are semi-stiff.
- 3. Gradually add the wasabi powder and the starch to the egg white mixture.
- 4. Finally, stir in the wasabi paste.
- 5. Drain the peanuts slightly and gently fold them into the mixture.
- 6. Spread the peanuts out on a baking tray greased with oil using a fork.
- 7. Bake the peanuts in the oven for about 45 minutes until they are crispy.
- 8. Remove the peanuts from the oven and let them cool down completely.
- 9. Roast the almonds in hot oil while stirring constantly.
- 10. Sprinkle the cinnamon and sugar over the almonds.
- 11. Caramelize the almonds briefly until the sugar melts.
- 12. Place the almonds on aluminum foil that has been lightly brushed with oil.
- 13. Let the almonds cool down.
- 14. Separate the almonds from each other if they stick together.
