  1. 1. Wash the arugula thoroughly, trim it, and let it drain well. Wash the tomatoes as well and slice them. Peel the onion and cut it into small cubes.
  2. 2. Mix 3 tablespoons of olive oil with balsamic vinegar until a creamy consistency forms, and season with salt and pepper.
  3. 3. Heat the remaining olive oil in a non-stick pan and briefly sear the cheese on both sides over high heat. The undersides should brown slightly without the cheese melting.
  4. 4. Arrange the arugula and tomatoes on plates, sprinkle with the onion cubes, and place the warm cheese pieces on top. Sprinkle with coarse pepper and serve immediately.
