🍽️ Warm Goat Cheese on Arugula with Tomatoes

Ingredients
- 2 bunch arugula
- 3 tomatoes
- 1 red onion
- 4 tbsp olive oil
- 3 tbsp balsamic vinegar
- salt
- pepper (from the mill)
- 4 small fresh goat cheese rounds
Instructions
- 1. Wash the arugula thoroughly, trim it, and let it drain well. Wash the tomatoes as well and slice them. Peel the onion and cut it into small cubes.
- 2. Mix 3 tablespoons of olive oil with balsamic vinegar until a creamy consistency forms, and season with salt and pepper.
- 3. Heat the remaining olive oil in a non-stick pan and briefly sear the cheese on both sides over high heat. The undersides should brown slightly without the cheese melting.
- 4. Arrange the arugula and tomatoes on plates, sprinkle with the onion cubes, and place the warm cheese pieces on top. Sprinkle with coarse pepper and serve immediately.
