🍽️ Warm cabbage salad with almonds and sausage

Ingredients
- 1 head Savoy cabbage
- salt
- 1 onion
- 200 g chorizo
- 4 tbsp olive oil
- 150 g almond kernels
- 1 tsp orange zest
- 1 tbsp lemon juice
- 2 tbsp orange juice
- 1 tbsp apple cider vinegar
- pepper (from the mill)
Instructions
- 1. Thoroughly wash the savoy cabbage under running water.
- 2. Remove the hard core at the bottom of the head.
- 3. Cut the vegetable into thin strips.
- 4. Bring a pot of salted water to a boil.
- 5. Add the cabbage strips to the boiling water for 2 to 3 minutes.
- 6. Drain the vegetable and rinse it immediately with cold water to stop the cooking process.
- 7. Let the water drain off well.
- 8. Peel the onion and remove the outer layers.
- 9. Finely chop the onion.
- 10. Slice the sausage into thin rounds.
- 11. Heat 2 tablespoons of oil in a frying pan.
- 12. Fry the sausage slices in the hot oil until browned.
- 13. Add the chopped onions to the pan.
- 14. Add the almonds.
- 15. Grate the peel of an orange and add the orange zest to the pan.
- 16. Fold the cabbage into the mixture.
- 17. Cook everything together by turning the ingredients repeatedly.
- 18. Add the juice of one lemon to the pan.
- 19. Add the juice of one orange to the pan.
- 20. Add vinegar to the pan.
- 21. Season the mixture with salt.
- 22. Season the mixture with pepper.
- 23. Divide the warm salad onto plates.
- 24. Drizzle the finished portions with the remaining oil.
