  2. 2. Roast the pine nuts until golden brown and fragrant.
  3. 3. Remove the pine nuts from the pan and set them aside.
  4. 4. Peel the garlic and slice it thinly.
  5. 5. Add one tablespoon of olive oil to the same pan.
  6. 6. Sauté the garlic slices briefly.
  7. 7. Remove the garlic from the pan and set it aside.
  8. 8. Peel the onions and cut them into coarse chunks.
  9. 9. Remove the kale leaves from the tough stems.
  10. 10. Wash the leaves thoroughly.
  11. 11. Drain the kale in a colander.
  12. 12. Cut the leaves into thin strips.
  13. 13. Bring salted water to a boil.
  14. 14. Blanch the kale in the boiling water for about ten minutes.
  15. 15. Drain the kale and let it dry well.
  16. 16. Add two tablespoons of olive oil, walnut oil, and apple cider vinegar to the kale.
  17. 17. Season the salad lightly with salt and pepper.
  18. 18. Keep the kale warm in the pot.
  19. 19. Sauté the onion chunks in the remaining oil.
  20. 20. Sprinkle the onions with sugar.
  21. 21. Caramelize the onions while stirring for two to three minutes.
  22. 22. Add red wine and let the liquid reduce.
  23. 23. Plate the warm kale.
  24. 24. Distribute the caramelized onions, pine nuts, and garlic over the salad.
  25. 25. Serve the salad immediately.
  26. 26. Optionally offer half a lemon to drizzle over the salad.
