🍽️ Crispy Shrimp Wonton Bites

Ingredients
- 12 sheets wonton dough
- 1 egg white
- vegetable oil (for frying)
- 12 raw large shrimp (peeled and deveined, ready for cooking)
- 2 tbsp light soy sauce
- chili powder
- 80 g mango chutney (jar)
- chervil (for garnish)
Instructions
- 1. Use a brush to lightly coat each wonton pastry square with egg white.
- 2. Fold the squares diagonally to form triangles.
- 3. Press the edges of the triangles firmly together so they do not open during frying.
- 4. Heat oil in a pan to approximately 170 degrees Celsius.
- 5. Carefully place the wonton triangles into the hot oil in batches.
- 6. Gently press the tips of the triangles down with the handle of a cooking spoon so they bulge upwards.
- 7. Fry the pockets for 2 to 3 minutes until they are golden brown and crispy.
- 8. Remove the finished wontons from the oil and let them drain on kitchen paper.
- 9. Rinse the shrimp briefly and pat them dry with a cloth.
- 10. Mix the shrimp in a bowl with soy sauce and chili.
- 11. Toss the shrimp in starch until they are lightly coated.
- 12. Fry the shrimp in batches in hot oil for about 2 minutes until golden brown.
- 13. Let the shrimp drain on kitchen paper as well.
- 14. Place one teaspoon of mango chutney on each cooled wonton pocket.
- 15. Place a fried shrimp on top of the chutney.
- 16. Garnish the bites with fresh chervil and serve immediately.
