  1. 1. Knead spelt flour with 30 g sugar, one egg yolk, salt, and 80 g diced butter. Shape the dough into a ball, wrap it in cling film, and let it rest in the refrigerator for 2 hours.
  2. 2. Grease the baking pan as needed and lightly dust with flour. Roll out the dough and line the pan with it. Prick the base several times with a fork. Blind bake in a preheated oven at 180 °C (convection 160 °C; gas: level 2–3) for about 15 minutes.
  3. 3. Mix the remaining sugar well with the egg and cream. Melt the remaining butter and stir it in together with cinnamon and nuts into the egg mixture.
  4. 4. Spread the mixture over the pre-baked base and bake for approx. 35 minutes until done. Let the walnut tart cool in the pan and then serve.
