  1. 1. Peel the carrot, the onion, and the garlic clove.
  2. 2. Cut the vegetables into very small cubes.
  3. 3. Heat oil in a frying pan.
  4. 4. Fry the diced vegetables in it.
  5. 5. Stir in the curry paste and the tomato paste.
  6. 6. Heat the mixture briefly.
  7. 7. Remove the pan from the heat.
  8. 8. Mash the tofu with a potato masher or press it through a potato ricer.
  9. 9. Place the mashed tofu into a bowl.
  10. 10. Add the prepared vegetables to the bowl as well.
  11. 11. Mix the whole wheat flour with the chopped walnuts.
  12. 12. Add the egg to the tofu and vegetable mixture.
  13. 13. Mix everything thoroughly together.
  14. 14. Season the mixture with salt and pepper.
  15. 15. Shape four burger patties from the mixture.
  16. 16. Lightly dust the patties on both sides with flour.
  17. 17. Heat fresh oil in a frying pan.
  18. 18. Fry the patties in the pan.
  19. 19. Fry each side for about 3 to 4 minutes.
  20. 20. Fry them until golden brown.
  21. 21. Let the finished patties drain on kitchen paper.
  22. 22. Peel the carrots for the side dish.
  23. 23. Shave the carrots into very thin slices.
  24. 24. Peel the shallot.
  25. 25. Dice the shallot very finely.
  26. 26. Melt butter in a pot.
  27. 27. Sauté the shallot in the butter.
  28. 28. Add the carrot slices.
  29. 29. Sauté the carrots briefly.
  30. 30. Season with sugar, salt, and pepper.
  31. 31. Add just enough water to cover the bottom of the pot.
  32. 32. Place the lid on the pot.
  33. 33. Cook the carrots until tender-crisp.
