🍽️ Crispy Walnut Tofu Burgers with Tender Carrots

Ingredients
- 1 tbsp oil
- 1 carrot
- 1 small onion
- 1 clove garlic
- 2 tsp mild curry paste
- 1 tsp tomato paste
- 300 g tofu (1 package)
- 25 g whole wheat flour
- 25 g chopped walnuts (to taste)
- 1 egg
- flour (to dust the burgers)
- salt
- pepper (from the mill)
- oil (for frying)
- 600 g carrots
- 1 tsp butter
- 1 shallot
- 1 level tsp sugar
- salt
- pepper (from the mill)
Instructions
- 1. Peel the carrot, the onion, and the garlic clove.
- 2. Cut the vegetables into very small cubes.
- 3. Heat oil in a frying pan.
- 4. Fry the diced vegetables in it.
- 5. Stir in the curry paste and the tomato paste.
- 6. Heat the mixture briefly.
- 7. Remove the pan from the heat.
- 8. Mash the tofu with a potato masher or press it through a potato ricer.
- 9. Place the mashed tofu into a bowl.
- 10. Add the prepared vegetables to the bowl as well.
- 11. Mix the whole wheat flour with the chopped walnuts.
- 12. Add the egg to the tofu and vegetable mixture.
- 13. Mix everything thoroughly together.
- 14. Season the mixture with salt and pepper.
- 15. Shape four burger patties from the mixture.
- 16. Lightly dust the patties on both sides with flour.
- 17. Heat fresh oil in a frying pan.
- 18. Fry the patties in the pan.
- 19. Fry each side for about 3 to 4 minutes.
- 20. Fry them until golden brown.
- 21. Let the finished patties drain on kitchen paper.
- 22. Peel the carrots for the side dish.
- 23. Shave the carrots into very thin slices.
- 24. Peel the shallot.
- 25. Dice the shallot very finely.
- 26. Melt butter in a pot.
- 27. Sauté the shallot in the butter.
- 28. Add the carrot slices.
- 29. Sauté the carrots briefly.
- 30. Season with sugar, salt, and pepper.
- 31. Add just enough water to cover the bottom of the pot.
- 32. Place the lid on the pot.
- 33. Cook the carrots until tender-crisp.
