🍰 Moist Walnut Muffins

Ingredients
- 300 g vanilla yogurt (1.5% fat)
- 2 eggs (M)
- 150 g cane sugar
- 150 g flour
- 150 g whole wheat flour
- 2 tsp baking powder
- 50 g walnut kernels
- 100 g sour cherries (frozen)
Instructions
- 1. Put the vanilla yogurt, eggs, and sugar into a large bowl.
- 2. Whisk the ingredients with a hand mixer on high speed until the mixture is smooth and creamy.
- 3. Mix the wheat flour and whole grain flour with the baking powder in a separate bowl.
- 4. Sift the flour mixture over the yogurt mixture.
- 5. Stir the dry and wet ingredients together briefly until no more flour is visible.
- 6. Chop the walnut kernels into coarse pieces using a large knife.
- 7. Gently fold the chopped walnuts and frozen cherries into the batter using a spoon.
- 8. Divide the batter evenly among 12 muffin cups lined with paper liners.
- 9. Place the muffin tray into the preheated oven.
- 10. Bake the muffins at 180 °C conventional heat (or 160 °C fan-forced or gas mark 2-3) for about 30 minutes.
- 11. Remove the tray and let the muffins cool completely on a wire rack.
- 12. Serve the finished muffins as desired.
