  1. 1. Put honey, 350 grams of sugar, cinnamon powder, ground cloves, and ground nutmeg into a pot.
  2. 2. Warm the mixture while stirring constantly over medium heat.
  3. 3. Keep stirring until the sugar has completely dissolved.
  4. 4. Finely chop the almonds, walnuts, candied orange peel, and candied lemon peel.
  5. 5. Add the chopped nuts and fruits to the hot syrup.
  6. 6. Remove the pot from the heat and set the mixture aside to cool.
  7. 7. Dissolve the potash in 2 tablespoons of kirsch (cherry brandy).
  8. 8. Gradually add two-thirds of the flour and the dissolved potash to the nut mixture.
  9. 9. Add the remaining kirsch (cherry brandy).
  10. 10. Spread the remaining flour onto your work surface.
  11. 11. Pour the dough mixture onto the flour.
  12. 12. Knead the dough quickly into a smooth ball.
  13. 13. Divide the dough into two equal halves.
  14. 14. Roll out each half on a floured surface to a thickness of about 6 millimeters.
  15. 15. Place the dough sheets on two baking trays dusted with flour.
  16. 16. Let the dough rest overnight.
  17. 17. Preheat the oven.
  18. 18. Bake the lebkuchen at 200 degrees Celsius (convection 180 degrees Celsius or gas mark 3) for 15 to 20 minutes.
  19. 19. Boil the remaining sugar with 100 milliliters of water for 5 minutes to make the glaze.
  20. 20. Cut the baked dough sheets to a depth of about 3/4 to create the traditional lebkuchen shape.
  21. 21. Remove the lebkuchen from the baking tray.
  22. 22. Gently brush off any excess flour.
  23. 23. Brush the lebkuchen with the hot sugar glaze.
  24. 24. Sprinkle crumbled meringue (small, crispy marshmallows) over the top.
  25. 25. Let the lebkuchen cool completely.
  26. 26. Finally, cut the lebkuchen all the way through.
